Antioxidant Activities of Moringa Oleifera Seed and Leaf Ethanol Extracts on Groundnut Oil

The antioxidant activities of Moringa oleifera seed and leaf ethanol extracts on crude groundnut oil were investigated. The objective of this study was to evaluate the peroxidation- inhibiting power of Moringa oleifera seed and leaf extracts on crude groundnut oil using the Schaal oven storage test. Groundnut oil samples containing the extracts in the proportion of 500-2,000 ppm were stored at 65 oC for 20 days. Butylated Hydroxyl Toluene (BHT) at 50 ppm was used as positive control. Peroxide values and antioxidant activities were determined at 5-day interval. The antioxidant activities of the moringa seed extracts ranged from 15.60±1.33 to 64.09±1.17 % and those of the leaf from 4.50±2.72 to 37.68±7.20 %, respectively while that of the BHT was 69.98±1.78 %. The antioxidant effectiveness of the seed and leaf extracts increased with the amount of added extracts. Both the seeds and the leaves of M. oleifera plant extracts exhibited peroxidation-inhibiting properties on crude groundnut oil, with the seed extracts, having higher antioxidant property.##submission.citations##
